Sourdough Discard Cheeseburger Pizza

Sourdough Discard Cheeseburger Pizza

Ingredients
  

Sauce

  • ½ cup mayonnaise
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 10 cracks fresh black pepper
  • 1 Tablespoon dill pickle brine
  • 2 teaspoons ketchup
  • ½ teaspoon mustard
  • ¼ teaspoon Worcestershire sauce

Pizza

  • ½ pound ground beef
  • ½ cup yellow onion chopped
  • yellow cornmeal for dusting the pizza paddle
  • 2 sourdough discard pizza dough balls (see link to my sourdough discard pizza crust recipe below)
  • 3 cups mozzarella cheese whole milk mozzarella, freshly shredded
  • 1 ½ cups mild cheddar cheese freshly shredded
  • dill pickle slices ~1-1 ½ whole Claussen pickles, thinly sliced and patted dry

Instructions
 

  • Prepare sourdough discard pizza crust recipe 4-5 hours in advance.
  • Insert baking stone into the oven and begin to preheat to 500°F when you are 45 minutes from baking.
  • To a small mixing bowl add all of the sauce ingredients. Whisk together until smooth and set aside until ready to assemble the pizzas.
  • Cook the ground beef and chopped onion together in a skillet over medium-high heat until the beef is no longer pink (breaking the beef apart into small crumbles). Drain and then place on a paper towel lined plate to further soak up any excess grease.
  • When ready to bake, generously cover the surface of the pizza paddle with yellow cornmeal. Place one ball of dough on the paddle and use your hands to press the dough out into a pizza shape. Start in the center of the dough and work toward the edges (the shape does not need to be perfect).
  • Spread a portion of the sauce across the top. Add just enough to cover the surface, making sure that it is not too saucy (it will make the pizza soggy).
  • Layer with ½ of the mozzarella, then ½ of the cheddar cheese, and finally ½ of the ground beef & onion.
  • Drizzle some of the sauce across the pizza and place the sliced pickles on top.
  • Using the pizza paddle, slide the pizza onto the hot baking stone in the oven. Bake for 7-8, or until the bottom is cooked and the edges are golden.
  • Repeat steps 5-9 for the second pizza.
  • Serve immediately with extra sauce on the side for dipping.

Notes

If using a store bought pizza dough, follow the package instructions for oven temp and bake time.
