If you’re looking for a simple yet beautiful drink to add to your next celebration, this is it! With just 2 ingredients this cocktail is perfect for your New Year’s Eve celebration, Girls’ Night In, Galentines, or Bridal Shower. It would even make for a stunning drink at a Baby Shower (by simply substituting the bubbly with a Sparkling White Grape Juice for the mom to be)!
Basic Ingredients for this champagne cocktail
- Rasberry Sherbet
- Your favorite champagne or sparkling wine (or a sparkling white grape juice for a delicious mocktail)
It’s arguable that this cocktail could also be considered a dessert! Pro tip: Have spoons ready to serve along with this champagne float and your guests will thank you as they enjoy an occasional bite of sherbet while sipping their festive bubbly drink. Use some lovely stemmed cocktail glasses (I served mine in these stunning glasses that I found on clearance at Hobby Lobby last Spring) and display on a drink tray. Have fresh raspberries on hand to add on top, or go an extra step and serve with champagne raspberries (raspberries that have been soaked in champagne and a healthy splash of vodka for at least an hour). With the later, you’ll have guests eating the raspberries all on their own!
Sparkling Wine Vs Champagne
In doing a little research of my own I learned that all Champagne is sparkling wine, but not all sparkling wine is Champagne! Sparkling wine can only be called Champagne if it originates from the region of Champagne, France. The sparkling quality comes from the carbon dioxide content that can be created by a few different methods, and while there are sparkling red wines most are white or rose. In my Raspberry Champagne Floats I prefer a dry white sparkling wine (like a Brut) because I think it pairs well with the sweetness of the sherbet. White, rose, dry, sweet….the choice is yours! This drink is easily customizable based on your preferences.
Different Variations/Fun ideas
- Use Lemon Sherbet with a sweeter sparking wine and serve with a lemon slice or lemon twist
- Serve Rainbow Sherbet with a sparkling white grape juice or lemon lime soda for a fun mocktail at a kids birthday party (I’m thinking unicorn or mermaid themed party!) Sparkling ICE (which is a sparkling water) would also work well here and they offer a lemon lime flavor.
- Switch out the Sherbet for Sorbet for a dairy free option
Raspberry Champagne Float
Ingredients
- 1-2 scoops raspberry sherbet
- Champagne or sparkling wine
- Fresh raspberries for garnish optional
Instructions
- Add 1-2 scoops of raspberry sherbet to a cocktail glass.
- Slowly pour Champagne or sparkling wine over the sherbet.
- Garnish with fresh raspberries, if you choose.
- Enjoy!
